Bacon Carbonara With Chicken

You’ll need:

½ lb of pasta.
Fresh diced parsley or dried flakes.
2 cups of cooked and cut up rotisserie chicken.
½ cup of cream or heavy cream.
½ cup of freshly grated parmesan cheese.
2 tsps of olive oil.
½ tsp of salt.
2 large eggs.
½ lb of bacon fried crisp then crumbled.
1 small finely chopped onion.
½ cup of chopped mushrooms (optional).

How to:

Mix together the eggs, cream, parmesan, parsley, salt and
olive oil in a large bowl until well combined.

Fry the bacon in a large pan until crisp then crumble.

Sauté the onion in 1 to 2 tbsps of the bacon grease and mix
in the chicken pieces.

Drain the pasta and mix in the onion-chicken mixture until
well combined.

Pour the egg and cream sauce into the pasta and mix over low
heat for 2 minutes.

Turn off the heat and mix in the bacon and Voila!
